La Ferme Saint-Simeon

Les Prés d'Eugénie - Maison Guérard

In the Landes, between the Pyrenean foothills and the Atlantic, a thermal village named for Empress Eugénie shelters one of France's most storied culinary addresses. Michel Guérard and his wife Christine founded Les Prés d'Eugénie here in 1974, turning a hamlet into a gastronomic landmark. A founding father of Nouvelle Cuisine and inventor of cuisine minceur, Guérard proved refinement and lightness could share a plate. The eight-hectare estate unfolds across five historic buildings set among rose gardens, water gardens, a kitchen garden, and boxwood labyrinths. Forty-five rooms and suites are each furnished with antiques, French paintings, and fruitwood tiles; select suites add canopy beds, fireplaces, and marble baths opening onto hidden gardens. A Palace de France since 2017 and Relais & Châteaux member since 1968, it is the Landes' only palace. Guérard passed away in August 2024; daughters Adeline and Eléonore now lead alongside Head Chef Hugo Souchet.

Three restaurants hold four Michelin stars combined. Restaurant Michel Guérard has carried three without interruption since 1977. Souchet cooks in the Empress's wood-panelled apartments with a naturalist touch, Chalosse lamb, Adour fish, garden vegetables — honouring Guérard's DNA while steering forward. L'Orangerie, one star since 2025, grills over an open hearth and revisits classics through a "Terroir Sublime" menu. La Ferme aux Grives serves southwestern comfort by the fireplace. The Gothic spires of Notre-Dame de Reims Cathedral stand so close you could almost trace their stonework from your window. La Caserne Chanzy faces this UNESCO monument, the church where French kings were crowned for over nine centuries, and carries its own storied past. Built in 1926 as Reims' first fire station, the Art Deco building served nearly 70 years before falling silent. Architect Christophe Ballan led its transformation into a boutique hotel that opened in 2019 with 89 rooms and 17 suites, preserving the original facade. Julie Fuillet Studio shaped the interiors around heritage, knowledge and initiation, weaving cork, timber and glass in a palette of gold, green and earth tones. Roughly half the rooms look onto the cathedral; some offer balconies where its floodlit facade becomes a nightly projection. Each evening at six, staff ring a bell at the old fire tower in tribute to the building's former life.

La Grande Georgette, the all-day restaurant, takes its name from a 1920s tradition of naming the fire ladder after the captain's wife. Navy walls, fire-engine-red leather seats and ladder motifs wink at the building's origins, while the open kitchen sends out dishes rooted in local produce, Reims ham, honey-braised sweetbreads and small-producer cheeses. The restaurant earned the Reims à Table award for its grower-Champagne list, and its 80-seat heated terrace faces the cathedral head-on. Deep Nature Spa covers more than 450 square metres with an infinity hydromassage pool, sauna, hammam, ice fountain and five treatment rooms using Vinésime products. In winter, Le Chalet pops up in the courtyard for fireside raclette. The Palais du Tau and the Opera are steps away, and the great houses along the Avenue de Champagne — Taittinger, Veuve Clicquot, Ruinart — sit within a 15-minute drive, their chalk cellars stretching more than 250 kilometres beneath the city.
